Crack 3 eggs into a cold frying-pan. Place a scoop of cold butter (1 Tablespoon) into the pan as well.
Beat the 3 eggs together. (Note: Don't worry about stirring in the piece of cold butter - it will melt later)
Now, place your frying-pan on a medium-high heat. Then continuously stir the eggs with a rubber or wooden spatula. Keep stirring and don't stop! Once the eggs start to curdle, take the frying pan off the heat and keep stirring until you get a oatmeal-like consistency. (Note: You can always place it back on the heat if it needs to cook some more)
Now, garnish the eggs with chives (2 Tablespoons) and season with salt (few shakes).
Place the silky eggs on the bun.
Place the caramelized onions over the egg.
Finally, pour yourself a glass of orange juice and Bon Appetit!
