Take tofu out of the package. Place into a bowl and microwave for 2 minutes. Then throw out the residual water. Set aside for later.
Cut spring onion into thin slices.
Take out a small bowl and thoroughly mix: Soy Sauce (2T), Honey (1T), Mirim (1T), Ginger Powder (1 pinch).
Put frying pan on medium heat. Place oil in. Once oil is hot, place spring onion pieces in.
Once spring onion pieces start to sizzle, place the tofu block in. Break the tofu block into very small crumbles. (Note: It may take some effort).
Then place-in the soy sauce mixture. Stir everything around. Let it simmer and reduce down.
Optional: If you like spice, I would highly recommend to add in Doubanjiang paste (1 teaspoon) or Gochujang (1 teaspoon).
Once most of the liquid is gone, turn off heat. Add black pepper (few shakes).
Spread your tofu mixture over a bed of hot rice.
Optional: Poach an egg. Season with salt and pepper. Then place on top of the bowl.
Garnish the bowl with spring onion slices. Bon Appetit!
