3 Everyday Veggie Banchans

Mix-and-match these veggie banchans with any main dish!

Ingredients

Eggplant Muchim

  • Eggplant - 3 whole 
  • Green onion - 1 stalk size of your forearm
  • Eggplant Muchim Seasoning
  • Soy sauce - 1 Tablespoon
  • Minced garlic - ½ Tablespoon
  • Sesame seeds - ½ Tablespoon
  • Sesame oil - 1 Tablespoon

Korean Kale Salad

  • Kale - 8-10 large stalks
  • Carrot - 2-3 inch piece
  • Onion - ¼ a whole 
  • Kale Salad Seasoning
  • Fish sauce - 1 Tablespoon
  • Gochugaru - 1 Tablespoon
  • Sesame seeds - 1 Tablespoon
  • Minced garlic - ½ Tablespoon
  • Sesame oil - 2 Tablespoons

Broccoli Muchim

  • Broccoli - 1 head
  • Green onion - 1 stalk forearm length
  • Salt - ½ Tablespoon 
  • Broccoli Seasoning
  • Soy sauce - 1 Tablespoon
  • Sesame seeds - 1 Tablespoon
  • Minced garlic - ½ Tablespoon
  • Sesame oil - 1 Tablespoon

Instructions

Eggplant Muchim

  • Cut the top off each eggplant. Then split the eggplant in half. 
  • Put water into a large pot. Bring up to a boil. Place the eggplant halves into a steaming basket and place over the water. Close the lid and steam for 3 minutes. After 3 minutes, take them out. 
  • Place the steamed eggplant into a kitchen towel. Give a good squeeze and take the water out. 
  • Then place the eggplant pieces into a mixing bowl. Pour in all of the listed ingredients under "Eggplant Muchim Seasoning". Thoroughly mix the marinade into the eggplant pieces. 
  • Finally, chop up the green onion and throw into the mix. Give one final mix.

Korean-Style Kale Salad 

  • Give the kale pieces a good rinse under running water. Use a salad spinner or let them drip-dry.
  • Use your knife and cut the stem out of each kale leaf. Throw the stem away. Then chop the remaining kale leafs into very small bite-sized pieces (the smaller the better). Place the leaves into a mixing bowl.
  • Julienne the carrot and toss into the mixing bowl. Cut the onion into thin strips and throw into the mixing bowl as well. 
  • Then place in all of the ingredients listed under "Kale salad seasoning" into the mixing bowl. 
  • Give it all a thorough mix with your hands.

Broccoli Muchim

  • Cut 2-3 inches off of the bottom stem of the broccoli (reference video)
  • Then cut the broccoli head into long florets.
  • Put water into a pot and bring up to a boil. Season the water with salt. 
  • Blanche the broccoli for 20-30 seconds. 
  • Then use your knife and cut the blanched florets into skinnier pieces. 
  • Use a salad spinner (or your hands) to shake off (or squeeze out) the excess water. 
  • Place the broccoli pieces into a mixing bowl. Then pour-in the listed ingredients under "broccoli seasoning". Give it a thorough mix with your hands. 
  • Cut the spring onion and place into the broccoli salad. Give one final mix. 
  • Serve and enjoy :)
