Zucchini Tots - Perfect late-night snack
Zucchini Tots is thinly sliced zucchini that is dipped in egg-wash and and pan-fried. You'll be pleasantly surprised by how good zucchini tastes by itself.
Servings: 2 people
- Zucchini - 1 whole
- Flour - ½ cup
- Eggs - 2
- Salt - 1 teaspoon
Dipping Sauce
- Soy sauce - 1 Tablespoon
- Vinegar - ½ teaspoon
- Lemon juice - Few drops optional
Wash the zucchini. Slice the zucchini into small round circles. Get a pinch of salt and sprinkle on each slice (on both sides). Let it rest for 5 minutes - zucchini will release water. Use a paper-towel to dab off the extra-moisture.
Place zucchini in a Ziploc bag. Place flour into the bag and shake vigorously to get each slice thoroughly coated. Take out a mixing bowl and whisk eggs to make an egg-wash. Then shake-off excess flour from each zucchini slice and dip into the egg-wash.
Pour oil into frying pan and put on medium low heat. Fry zucchini on both sides until light brown.
For dipping sauce, mix soy sauce, vinegar and lemon together. Enjoy!
