Korean potato salad is one of my favorite banchans to eat at Korean restaurants. It is not a traditional Korean dish, but rather a western recipe (US?) that has been localized to the Korean palate.
There are a few differences. First the potato is mashed until it is soft and creamy, no potato chunks. Second, thinly sliced vegetables like cucumber and carrots are mixed into the potato mixture. You end up with a potato salad that has a mix of textures - it is both creamy and crunchy.
This simple banchan goes great with fresh soft dinner rolls. (Hawaiian bread rolls are money!) If you have children, this may become their next favorite dish. Serve it as a snack by itself or as filling in a sandwich.
Key taste variable: Mayonnaise. If you have an Asian mart in your area, try using either Korean (Ottogi) or Japanese (Kewpie) Mayonnaise. They both have a smoother and thinner consistency with a slight touch of tanginess. It is notably different from US brands like Krafts or Hellmann's.

Korean Potato Salad
Ingredients
- Potato - 350 grams 3 palm-sized potatoes
- Cucumber - ⅔ of a whole
- Carrot - 2-inch cut
- Onion - ¼ of a whole
- Ham - 2-inch cut
- Eggs - 2
Mayonnaise Seasoning
- Korean Mayonnaise - ½ cup or Japanese Mayonnaise
- Sugar - 1 Tablespoon
- Salt - few shakes
- Black pepper - few shakes
Instructions
Prep Ingredients
- Cut the cucumber piece in half. Then dice into very thin slices. Take out a mixing bowl.
- Place the sliced cucumbers in and coat with 1 tablespoon of salt. Thoroughly mix the salt onto the cucumbers with your hands. Let it sit for 30 minutes.
- Next, dice the ham, onions and carrots into small bite sized pieces. Squeeze out the excess water from onions and carrots with a paper towel.
- Then hard-boil two eggs. Separate the fully-cooked egg yolk from the white. Chop the egg whites into small bits and set the yolk aside.
Boil Potatoes and Finish Cucumbers
- Take out a large pot and fill with water. Boil the potatoes for 20 minutes.
- In the meanwhile, check on the cucumbers. Drain the water and give them a wash under a running faucet to take off the salt. Then take a handful at a time and give a nice firm squeeze to take out the water. Set the squeezed cucumbers aside.
- Check back on the boiling potatoes and see if they are soft. Drain in a strainer and let them drip-off excess water for about a minute.
Make Salad
- Take out a large mixing bowl. Place in the cooked potatoes and mash them with a spoon.
- Then place in the diced ham, carrots, egg whites, onion and cucumbers.
- Place in the mayonnaise next. Then place in the sugar, salt and black pepper and mix thoroughly.
- Finally use a cheese-grater to grate the egg yolk over the top. Enjoy!
Notes
- Make sure to squeeze the water out of the diced vegetables (cucumbers, carrots and onions). This will prevent your potato salad from becoming watery.
